Daring Baker's July Challenge

And it is super delicious, you'd never go back to store bought ones ever!! As always my notes are in red

The July Daring Bakers' challenge was hosted by Nicole at Sweet Tooth. She chose Chocolate Covered Marshmallow Cookies and Milan Cookies from pastry chef Gale Gand of the Food Network.

Mallows(Chocolate Covered Marshmallow Cookies)
Recipe courtesy Gale Gand, from Food Network website
Chocolate Covered Marshmallow Cookies
Prep Time: 10 min
Inactive Prep Time: 5 min
Cook Time: 10 min
Serves: about 2 dozen cookies - it made heaps more than this. I reckon I made about 6 dozen, and there was still dough left over.

• 3 cups (375grams/13.23oz) all purpose flour
• 1/2 cup (112.5grams/3.97oz) white sugar
• 1/2 teaspoon salt
• 3/4 teaspoon baking powder
• 3/8 teaspoon baking soda
• 1/2 teaspoon ground cinnamon
• 12 tablespoons (170grams/ 6 oz) unsalted butter
• 3 eggs, whisked together
• Homemade marshmallows, recipe follows
• Chocolate glaze, recipe follows

1. In a mixer with the paddle attachment, blend the dry ingredients.
2. On low speed, add the butter and mix until sandy.
3. Add the eggs and mix until combine.
4. Form the dough into a disk, wrap with clingfilm or parchment and refrigerate at least 1 hour and up to 3 days.
5. When ready to bake, grease a cookie sheet or line it with parchment paper or a silicon mat.
6. Preheat the oven to 375 degrees F.
7. Roll out the dough to 1/8-inch thickness, on a lightly floured surface. Use a 1 to 1 1/2 inches cookie cutter to cut out small rounds of dough.
8. Transfer to the prepared pan and bake for 10 minutes or until light golden brown. Let cool to room temperature.
9. Pipe a “kiss” of marshmallow onto each cookie. Let set at room temperature for 2 hours.
10. Line a cookie sheet with parchment or silicon mat.
11. One at a time, gently drop the marshmallow-topped cookies into the hot chocolate glaze.
12. Lift out with a fork and let excess chocolate drip back into the bowl.
13. Place on the prepared pan and let set at room temperature until the coating is firm, about 1 to 2 hours.

Note: if you don’t want to make your own marshmallows, you can cut a large marshmallow in half and place on the cookie base. Heat in a preheated 350-degree oven to slump the marshmallow slightly, it will expand and brown a little. Let cool, then proceed with the chocolate dipping.

Homemade marshmallows:
• 1/4 cup water
• 1/4 cup light corn syrup - I used a variation of 1/2 light corn syrup/1/2 glucose syrup - for us Aussies you can just use glucose syrup.
• 3/4 cup (168.76 grams/5.95oz) sugar
• 1 tablespoon powdered gelatin
• 2 tablespoons cold water
• 2 egg whites , room temperature
• 1/4 teaspoon pure vanilla extract

1. In a saucepan, combine the water, corn syrup, and sugar, bring to a boil until “soft-ball” stage, or 235 degrees on a candy thermometer.
2. Sprinkle the gelatin over the cold water and let dissolve.
3. Remove the syrup from the heat, add the gelatin, and mix.
4. Whip the whites until soft peaks form and pour the syrup into the whites.
5. Add the vanilla and continue whipping until stiff.
6. Transfer to a pastry bag.

Chocolate glaze:
• 12 ounces semisweet chocolate
• 2 ounces cocoa butter or vegetable oil

1. Melt the 2 ingredients together in the top of a double boiler or a bowl set over barely simmering water.

Whilst a little timeconsuming, these bikkies are just divine!!!! The recipe does make many many more than stated, but they are very moreish. The plain biscuits are yummy sandwiched together with chocolate buttercream.

Will the marshmallows I did need to beat for a long time and whilst I wouldn't have called the mixture stiff - was more firm. I was worried when I piped it that it was going to slide all over the place, it didn't. Once piped it set quite fast and the half and half mixture of glucose and corn syrup makes for the most gorgeous mallows, not too sweet, not too sticky, just beautiful. Thanks to Audax Artifex
for that tip.

And of course I'd run out of chocolate for dipping, so mine are very pale as they are a mixture of milk and white chocolate. I also did some with a dob of jam under the marshmallow and they were delicious as well.

How can you be mad?

When she's just so darn cute.

And this is what happens when Mummy is distracted by washing and cleaning and sewing sigh! But she has promised to pick them ALL up - hmm, well we will see.

I probably should have realised when she was so quiet!

Eye Popping Candy

Well I think so. A gorgeous newborn pack for a little bubba girl, due just around the corner. The brief was lime and purple.

The fronts. A wetbag in huckleberry minky PUL. 2 Minky Auriels, in huckleberry and spring green. A fitted auriel of lush bamboo velour and lime sherpa inner. 3 raphaels including a marble dyed one - my favourite. 5 velour/sherpa wipes.

And the backs, just as gorgeous as the fronts.

and a close up of the marble dyeing on the raph - just scrummy - looks good enough to eat.

Happy 3rd Birthday Katherine

Okay, okay, so I'm a slack blogger. Katherine's birthday was a week ago, but things have been slightly insane in the Cherub house. We've had illness, work, Nappy Hunt, and Shane and i are going away in a weeks time, for a very long deserved and absolutely needed break away, so we are madly rushing around trying to get orders finished, pack and everything else.

Anyways we only had a very quiet family birthday for Miss K - and here are some piccies. She wanted pink piggy cupcakes, so that's what she got :) She's wearing a divine hand-dyed Jule from Willow and Moo just gorgeous isn't it - she calls it her kirt, read skirt, and wore it every day for 3 days even to bed lol! until it got covered in yoghurt, but it's been washed and washed since then.

Yummo, a little piggy to eat.

And of course just because, angel came to visit and took these gorgeous photos of the children.

Katherine

And my shy guy William.

My Creative Space

Well just a little portion of it. I dyed these fabrics this week for an order, lime and purple, and they are divine. Can you see my gorgeous angel - she was sent to me from my angel. Plus a cute little boy of blue, sent to me by another lovely lady, he is soooo cute and Katherine keeps trying to pinch him. Thank you to both of you, you know who you are :)

Plus some of the raphaels that went out recently for bubbas yet to arrive and an early arrival.

Slowly getting through what I need to get done before we go away, though it's not looking great to have it all finished, nor is our trip going to plan so far sigh!

And I just wanted to say thank you for all the emails that I received over the last week, it has been very much appreciated.

A new Angel on the block

After some prodding from friends, and the fact that we are going to be extra busy before we know it with the Nappy Hunt, I am pleased to announce that we have a new Cherub in the ranks. A lovely lady will be stepping up as our customer service Angel - Angel will be fielding email enquiries with regards to Cherub's Kiss products, so I can concentrate on sewing and creating. I've been quite inundated lately with emails and hopefully this will help to make things smoother.

Emails will still be answered in a timely fashion, please allow up to 24 hours for your emails to be answered. If you enquiry is time-sensitive, please make a note in the subject heading. Please note that emails may not always be answered on the weekend, as both The Cherubs and the Lovely Angel have families to tend to.

I'm currently just finishing some stock to put up, but again they will be stocked on OzeBaby at random. My sister arrives on Sunday for a few days and I'll be spending that with her. So more stock will more than likely not go up till late next week.

Shane and I will be away for most of August, and when we are home will be preparing for the hunt, as a consequence my Cherub's Kiss and OZebaby Store will be closed for the month of August. But I'll be back in time for the Hunt on the 1st September.
